Instructions to make to make Red Velvet cake

  1. STEP 1- Preheat your oven at least 10 minutes, before you start mixing all your cake ingredients, to 350°F or 180°C. If you don't have an oven, you can make use of a Gas or Kerosene stove and a clean pot either empty or filled with sand or salt.   5. Step 5- Add the sugar and red food colouring and blend for 10 seconds on low speed.
  6. Step 6- Add half of the flour mixture into the blender and blend for only 5 seconds on low speed (we are not trying to mix in the flour thoroughly yet so 5 seconds will do), also, with the help of a spoon, try swirl the flour so it gets to the bottom of the blender.
    Then add the other half of remaining dry ingredients and blend at low speed first for 5 seconds then turn it off and scrap the flour by the sides of the blender.
  7. Now stop blending and swirl the batter with a spoon to make sure there are no pockets of flour and everything is evenly distributed.
    You'll know the cake batter ready because you will get a very smooth mixture. DO NOT OVER BLEND OTHERWISE YOU WILL GET A VERY TOUGH AND UNPLEASANT CAKE.
  8. STEP 7- Pour the cake batter into the baking pan(s). And if you're baking with two different cake pans it would take 25- 30minutes to get done but if you are baking with a singe cake pan it would take 55-60 minutes to get done.
  9. Step 8 - Bake for the amount of time needed depending on the number of cake pan(s) used. To check if the cake is ready, insert a toothpick or a spaghetti or a clean knife into the centre of the cake and if it come out clean the cake is ready, but if it comes out stained, you will need to bake the cake longer for just some minutes.
  10. Step 9- When the cake is ready allow it to cool in the cake pan for 10 minutes at least,"DO NOT REMOVE IT IMMEDIATELY BECAUSE IT IS STILL TOO SOFT AND NEEDS TO HARDEN A LITTLE AND ALSO YOU MIGHT GET BURNT BY THE CAKE PAN.
    After 10 minutes remove the cake and let it cool completely before serving/frosting it with icing.
  11. IMPORTANT NOTES
    For the measurements,

    *A Leveled Table spoon of flour is roughly equal to 10g.

    *A leveled milk cup of flour is roughly equal to 95g.

    *A leveled Tablespoon of sugar is equal to 12.5g.

    *A Tablespoon of liquid (water/milk/oil) is equal to 7.5ml (some people say its 15ml but that is very wrong)

    *To make buttermilk all you need to do is to get a cup of milk 240ml and add 1 table spoon of lemon or lime juice stir it and let it sit for only 5 minutes ( beyond 10 minutes you will g
  12. If you only have access to powdered milk just dilute 4 sachets of powdered milk (48g) in 26 Tablespoon of water to get 240ml, a cup of milk.

    *Never open the oven for a long time while the cake is baking and if you have to do so, let it be only for a short while after it has passed half of its baking time, which will be determined again by the number of pan(s) used.
  13. Do not over mix your cake batter or your cake will end up getting to tough because you would have activated the gluten in the flour.

    *If you are using a gas stove with a fitted burner DO NOT BE TEMPTED TO INCREASE THE HEAT TO MEDIUM OR HIGH, let it remain on low because the flames from the gas stoves have higher intensities than those of kerosene stoves and you can make use of a clean pot and salt or sand, if you don't like either of them, then just bake with an empty pot.
